You already eat this at home. Anji just grows it better.
The same shoot that lands on your table as rebung, labong, nor mai or măng starts its life here, inside the moso groves — and the county has spent a thousand years deciding what to do with it.
Anji eats bamboo all year, but the calendar matters: March–April is fresh spring-shoot season (油焖笋, 腌笃鲜, shoot digging), December–February is the prized winter shoot, and the rest of the year the county eats it dried (笋干). Start with braised shoots and bamboo-tube rice — both beginner-proof, one of them vegan — and if you are four or more, book one 百笋宴 banquet.
Five shoots, one year
Every disappointment with bamboo food is a calendar mistake. This table is the whole game.
| Shoot | When | Lands in | Market price (2026 ref.) |
|---|---|---|---|
| 冬笋 · Winter shoot | December – February | 腌笃鲜 soup, stir-fries with cured pork | ¥40–80 / kg |
| 春笋 · Spring shoot | March – April | 油焖笋, 腌笃鲜, shoot dumplings | ¥8–20 / kg |
| 毛笋 · Mao shoot | April – May | Dried into 笋干, fermented | ¥6–15 / kg |
| 鞭笋 · Rhizome tip | June – September | Light summer soup | ¥30–60 / kg |
| 笋干 · Dried (扁尖) | All year | 笋干烧肉, noodle topping | ¥60–120 / kg |
Prices are 2026 wet-market reference. A farmhouse in October serving you dried-shoot dishes is not laziness — it is what the calendar allows.
Nine things to order
Chinese name first — that is what you will point at — then what it is and when it is at its best.
Braised shoots (you men sun)
Fresh spring shoots braised low in oil, soy and rock sugar until glossy and amber. Completely vegan, and the dish that converts guests who claim not to like bamboo. If you eat one thing on this page, it is this.
Salt-pork and shoot soup (yan du xian)
The name means salted, simmered, fresh: salted pork, fresh pork, spring shoots and a tofu knot in a milky broth. Spring only, and every farmhouse guards its own version. Our single most-requested dinner.
Dried shoots with pork belly (sun gan shao rou)
Dried shoots rehydrated overnight, then braised with pork belly until the smoke-sweet shoot soaks up the fat. This is how the county eats bamboo from June to February, and how you will cook it at home if you buy the dried bags.
Bamboo-tube rice (zhu tong fan)
Glutinous rice with cured pork — or mushroom for vegetarians — steamed inside a green culm over coals. The tube is split open at the table and the rice comes out faintly bamboo-scented. Children demolish it.
Hand-peeled shoots (shou bao sun)
Whole small shoots boiled in brine, plain or chilli, until the husk slips off with your fingers. The county's road-trip snack, sold in vacuum bags at every market for a few yuan.
The hundred-shoot banquet (bai sun yan)
Anji's signature format: a full table of ten to twenty courses, every one built on bamboo — shoot dumplings, shoot cake, shoot soup, shoot noodles. Order one per four to six people, roughly ¥150–300 a head.
Bamboo-forest chicken (zhu lin ji)
Free-range county chicken stewed with shoots and ham in a clay pot. The chicken is the excuse; the soup, half broth half bamboo sweetness, is the point.
Bamboo fungus soup (zhu sun)
Not a shoot at all: a lacy white mushroom that grows on bamboo litter, simmered in clear chicken stock. Delicate, faintly crisp, and the most elegant thing on this list. ¥40–80 a pot.
Bamboo-tube wine (zhu tong jiu)
Rice spirit aged inside a living culm, which trades moisture with the liquor as it grows. Bought mostly as a souvenir; quality varies wildly, so taste before you buy a case.

Five phrases that cover the whole menu
Every dish on this page exists in Chinese characters only at farmhouse level, so we teach five lines instead of twenty:
| Say this | Sounds like | Meaning |
|---|---|---|
| 我要一份油焖笋 | Wǒ yào yī fèn yóu mèn sǔn | One braised shoots, please — the safe, vegan default. |
| 不要辣 | Bú yào là | Not spicy. Hand-peeled shoots and some braises come chilli by default. |
| 有素的笋菜吗? | Yǒu sù de sǔn cài ma? | Any vegetarian shoot dishes? 油焖笋 and 竹筒饭 (mushroom) both qualify. |
| 笋是新鲜的吗? | Sǔn shì xīnxiān de ma? | Are the shoots fresh? In autumn the honest answer is usually no — dried is better. |
| 这个里有没有猪肉? | Zhège lǐ yǒu méiyǒu zhūròu? | Does this contain pork? Farmhouse cooking puts pork in almost everything. |
Four rooms, four experiences
| Where | Type | Price | Honest note |
|---|---|---|---|
| Farmhouse restaurant (农家乐) | Around the villages | Set menus ¥40–70 a head | Shoot dishes at their most honest. No English — point at the next table or send us your order in advance. |
| Homestay dinner (half-board) | Most village homestays | ¥60–100 a head | Book at check-in; the kitchen cooks what the family eats that day. The best value dinner in the county. |
| 百笋宴 specialist | Anji county town | ¥150–300 a head | The full banquet format, twenty courses deep. Worth doing once per trip with four or more people. |
| Morning market stalls | County town and village markets | ¥5–15 a bag | Hand-peeled shoots, shoot dumplings and everything vacuum-packed. Go before 09:00 for the good stalls. |

Dig your own lunch
In shoot season, half the county's families have a grove and a spare basket. A half-day with a farmer — ¥120–180 per person — teaches you to spot the cracked soil where a shoot is pushing up, hands you the hoe, and ends with the kitchen cooking whatever you dragged out of the ground.
It is muddy, mildly competitive, and consistently the meal our guests remember most from Anji. Children from about 5 years old can do it; wear shoes you do not care about.
Straight answers
Is bamboo shoot safe to eat?
Yes, cooked. Raw fresh shoots contain natural compounds that cooking destroys, which is why every proper kitchen parboils shoots and discards the water. Never eat raw shoot at a farm stall, and you will have no problems at all.
When is bamboo shoot season?
March to April is the peak: fresh spring shoots everywhere, fields open for digging, and 腌笃鲜 on every stove. December to February is the connoisseur window for winter shoots. The rest of the year the county eats dried shoots — which is a feature, not a compromise.
I am vegetarian / Muslim — what can I eat?
油焖笋 braised shoots are vegan, and bamboo-tube rice can be made with mushroom instead of cured pork — say 素 (vegetarian) when ordering. Pork runs through most farmhouse cooking, so tell us in advance and we route you to kitchens that can cook separately. Our main FAQ has a full halal section.
Can I take dried bamboo shoots home?
Usually yes — vacuum-packed 笋干 keeps for months and is the most-bought souvenir among our guests (¥25–60 a bag). But declare it: Australia, New Zealand, the Philippines and Indonesia restrict plant products, and rules change. Fresh shoots: assume they will not be allowed into any country.
Is the hundred-shoot banquet worth it?
With four to six people, yes — once per trip. As a couple or solo, order two or three dishes at a farmhouse instead; the banquet's value is variety, not quality per dish.
Can we dig our own shoots?
In March and April, yes: a half-day with a farmer, ¥120–180 per person including the basket, the lesson and lunch cooked from your haul. Wear shoes you are prepared to ruin. Book through us two or three days ahead.
Want shoot season on your dates?
Tell us when you land. If it is March or April we will build the trip around the shoots — digging morning, banquet night, farmhouse everything. If it is not, we will tell you what the calendar allows instead.
